Entrance  

 

Creamy green pea soup with double cream and fresh aromatic herbs,

crushed and then roasted hazelnuts

 

Or

 

Panna cotta with shellfish stock cream, confit tomatoes and broad beans,

shallot chips and young shoots with balsamic

 

 

Main course

 

Gnocchi Provençal panisses colored with olive oil from the Beaujeu oil mill,

tomato and preserved lemons, shallots, black olives, fresh Bresse cheese

scented with pink peppercorns and fleur de sel

Chicken cordon bleu from Ain, cooked ham and Emmental cheese from Bresse,

rich juice with fresh garlic and old-fashioned mashed potatoes

Oven-roasted fish of the day, chicory cappuccino and green asparagus,

with hints of sweet spices and smoked curry, and a 62% dark chocolate coulis

The Paris-Brest revisited with a traditional praline center

and hazelnut cream in various textures

French toast pan-fried in Bresse butter

Any request to change a dish in the menus will automatically result in a price change.

The ice creams and sorbets, which can accompany certain desserts, are made by our

Master Artisan Ice Cream Maker “Glaces des Alpes” in Haute Savoie.
